01 · SEND

Five things start the clock.

The clock starts when these land. Nothing else delays it.

01

Three months of accounts

The shape of the business, and whether each line of the P&L is anywhere near where it should be.

02

A POS export by daypart and category

Where the revenue actually comes from, and which parts of the week are quietly carrying the rest.

03

Your menu with prices

Costed against what you buy, dish by dish, rather than against what feels right.

04

Four weeks of rota or payroll, with covers against them

Labour measured against demand, not against last year or against habit.

05

Basic operating context

Suppliers, lease, headcount, and anything that has changed in the last twelve months.

01

Portioning and waste

What leaves the kitchen against what was costed, and what goes in the bin.

02

Comps, voids and discounts

The pattern of them, who authorises them, and what they add up to over a year.

03

How orders reach the kitchen

Where the delays, the remakes and the missed upsells actually happen.

04

Labour against demand

Who is on, when, and whether the shape of the rota matches the shape of the trade.

05

The room

What the space, the layout and the atmosphere are doing to spend per head.

02 · OBSERVE

In your building. During service.

Three to four hours under pressure—when the delays, waste and missed revenue show themselves.

THE PRINCIPLE

Not a walk round when the room is empty and everything looks fine.

03 · REPORT

Every finding gets a number.

Ten sections, written by Siroosh. Then ninety minutes going through the report with you.

It ends with a thirty day plan in priority order, ready to start on Monday.

THE GUARANTEE

We find at least £25,000 a year of recoverable profit and missed revenue, or you don't pay for the audit.

What “find” means

Identified and quantified in the report, annualised. Not banked. He cannot promise you will act on it, because that part is yours.

Both sides of the P&L

Cost that should not be leaving the building, and revenue that should be arriving and is not.

What it costs you to test

Nothing. If the report does not reach £25,000, the audit is free.

Offered to venues turning over roughly £1m and above. Below that the number is not credible and we will say so rather than take the fee.

BOUNDARIES

What the audit is not.

01

It is not marketing

No campaigns, no social, no rebrand. If your problem is that not enough people know you exist, he will say so, and he is not the person to fix it.

02

It is not a template

Siroosh writes the report himself, from your numbers and your building. There is no team and no associate.

03

It is not a document you file

The last section is a thirty day plan in priority order, written so you can start on the Monday.

What happens after the audit

Book a call.

Twenty minutes. He will ask about your covers, your labour percentage and your food cost, and tell you whether there is £25,000 in there worth finding. If there is not, he will say so.
