AFTER THE AUDIT

The report is yours. What happens next is optional.

Run the plan yourself, or bring Siroosh back for one problem, the full implementation, kitchen standards or ongoing oversight.

Review the Profit Audit
  1. 02 · Narrow

    The Focused Sprint

One or two workstreams, four to six days. The two biggest problems in the report, and nothing else.

For venues that need the money to go further, or where the audit found one thing large enough to be worth all the attention.

    £3,000 to £4,000

    30 DAYS

  2. 03 · Standards

    Kitchen Standards Days

Siroosh sets what good looks like in your kitchen and judges whether your chef is delivering it. Prep discipline, portion control, section standards, cleanliness, consistency across a service.

This is standards, not cooking. He is not on the line and he is not covering shifts. That boundary is written into the engagement letter.

    £750 to £1,000

PER DAY, IN BLOCKS OF THREE OR FIVE

  3. 04 · Review

    Quarterly Profit Review

A review of the numbers every quarter against the plan, so the gains do not quietly drift back over six months.

The lightest way to keep someone looking. Most things that get fixed get unfixed, and this is what stops that.

    £395

    MONTHLY

  4. 05 · Partner

    Profit Partner

Ongoing advisory. Monthly review of performance, support for your management, accountability on the plan, and new opportunities as they appear.

Realistically this starts around month five, once there is something worth holding on to.

    £2,000 to £3,000

    MONTHLY

CHOOSING THE LEVEL

Start where the report points.

The five offers are not a ladder you have to climb. They cover three different jobs: implementing the plan, setting a specialist standard, or keeping the gains in place.

IMPLEMENT

01

Start with the plan

Choose the Sprint for full implementation, or the Focused Sprint for the one or two findings that matter most.

SPECIALISE

02

Set the kitchen standard

Use Kitchen Standards Days when the work is specifically prep, portions, sections, cleanliness and consistency.

RETAIN

03

Keep the gains

Use quarterly review for light oversight, or Profit Partner for ongoing advice, management support and accountability.

PAYMENT

Two useful terms.

01

The audit fee comes off

Start a Sprint or a retainer within fourteen days of your audit presentation and the £1,250 is credited against your first invoice.

02

A Sprint can be spread

Invoiced across the thirty days in three payments. Nothing about the work changes.

QUALIFICATION

Can the plan be implemented?

Current profitability is not the test. The questions are whether you can fund the work and whether the business can act on it.

SUITABLE · 01

Profitable, but underperforming

Trading well and convinced the profit should be better. The easiest first conversation and the natural home of the full Sprint.

SUITABLE · 02

Unprofitable or marginal, but funded and in control

Often the better client. A venue clearing £30,000 that finds £40,000 of leakage is transformed rather than improved.

THE BOUNDARY

Where he will say no

Creditor pressure, arrears with HMRC or the landlord, a sale in progress, or an owner who cannot authorise spend. In those situations there is no cash to pay and no room to change anything, and he will tell you on the call rather than take a fee for a report you cannot act on.

Book a call.

Twenty minutes. He will ask about your covers, your labour percentage and your food cost, and tell you whether there is £25,000 in there worth finding. If there is not, he will say so.
